Recognizing dairy products in ingredients lists
Apart from the obvious milk, yogurt, butter, cheese, cottage cheese, cream and sour cream, look out for butter fat, buttermilk, butter oil, lactose, lactoserum, curds, whey, milk solids, modified milk ingredients, milk sugars, casein, caseinate, natural butter flavor, artificial butter flavor, lactic acid, sodium caseinate, ghee, goats milk, half and half, hydrolysates, kefir, koumiss, lactalbumin, lactalbumin phosphate, lactoglobulin, lactulose, nougat, paneer, pudding, rennet casein, sour cream solids, sour milk solids, and similar descriptions.
Lactose is present in almost all dairy products except butter, and is used as a food additive in processed meat products such as sausages, hot dogs, sliced meat, paté, gravy powder, stock cubes, as well as margarine, breakfast cereal, dried fruit, ready meals/tv dinners, slimming products such as meal replacement bars and shakes and protein supplements. It's also a base ingredient in 20% of all medications.
Casein is found in all milk products, and is commonly found in bread, crackers, cookies, cakes, prepared meats, soy cheese!, soups, gravies, potato chips (UK: crisps), margarine, and even in many products labeled "non-dairy", such as whipped topping and creamer. Even if casein has not been added deliberately, there may be cross-contamination in the factory if dairy products are processed in the same facility. For the same reason, although whey is a different protein, it's likely to be contaminated with casein and should not be used by those intolerant of casein.
Other products to watch out for include artificial sweeteners, which are often derived from dairy products, breath mints, caramel, chocolate (including some dark chocolate), nougat, as well as some coffee whiteners/creamers (though many of these are made from corn syrup).
And here's a list of some of the foods likely to contain gluten:
Baked goods: pizza, bread (white, brown, wholemeal, granary and rye bread), pastry (pies, pasties, sausage rolls), cakes and patisserie, biscuits, ice cream wafers, crackers, crispbreads • Pasta: macaroni, spaghetti, vermicelli, lasagne, ravioli, noodles etc. • Prepared meat products: Sausages, burgers, grills (these mostly contain breadcrumbs) • Many diet and low fat products (flour is used as a thickener in place of oil or fat) • Almost all ready meals (tv dinners), restaurant and take-out food, chilled, dried or canned soup and stew • Prepared fish: Crab sticks, prawnies, fish in sauce, fish pie etc. • Batter: pancakes, yorkshire pudding, fish and chips • Breadcrumbs: coatings and toppings on fish, potato products, etc. • Many types of ice cream • Most breakfast cereals and cereal bars (except good quality cornflakes), muesli, bran flakes, wheat germ, bran • Ready-made smoothies, yoghurt, some fruit juices • Some cheaper brands of chocolate drink • Many chocolate bars and ice lollies, as well as all chocolate coated biscuits and wafers (Club, Penguin, KitKat, Take a Break etc.) • Some cheap brands of instant coffee! • Bought grated cheese (which is coated in flour) • Soya sauce (usually fermented with wheat) • Cook-in sauces, gravy mix, stock cubes • Monosodium glutamate • Malt, malt extract, malt vinegar, maltase, maltodextrin, malt toffee, Maltesers, Ovaltine, Horlicks • Bulgar, semolina, couscous, durum wheat • Bread flour, brown flour, wholemeal flour, granary flour, plain flour, rye flour, self raising flour, strong flour, cake flour, gluten flour • Baking powder (most contains flour) • Packet suet (which is coated in flour) • Possibly also oatmeal: porridge, hot breakfast cereal (eg. Readybrek, Oatsosimple), oatcakes, flapjacks (most oatmeal in the US is processed in factories used to process other grains, such as wheat, and is contaminated with gluten because of this)The golden rule is: Always Check the Label!

If you're excluding gluten along with casein, lactose or just dairy products in general, Gluten and Dairy Free-Easy is the recipe book for you.
It's not easy finding safe foods if you can't eat gluten or dairy products
Go into any restaurant or takeaway and try and find something on the menu that is gluten and dairy free. You may point to the french fries, but unless firstly they are pure potato without any additives, and secondly they are cooked in a dedicated fryer, separately from any breaded or battered food items, they will be contaminated. Hmm... Well, you might get a side salad — but check there's no cheese in it!
You can try the same exercise in your local supermarket. Check the shelves for products that are safe to eat if you need to avoid gluten and dairy. It's going to be a long job... Sure, the fresh fruit and vegetables will be fine, and most of the uncooked meat in the butchery section (but not the sausages or the burgers). Fresh fish should be ok, but most frozen fish will be no use to you (even the seafood sticks). As for desserts, there's tins of fruit, probably jelly, but most of the toppings... even the ones labeled "non-dairy" will almost certainly contain casein.
Excluding gluten and dairy products from your diet is definitely not something you do for fun. You're going to have to learn a whole new way of eating, and go back to basics in the kitchen.
You'll get used to checking the labels on everything, every time you go shopping, in case the manufacturers have changed the recipe without mentioning it on the front of the pack (as they do, all the time). Another thing you will grow accustomed to is having to make most stuff yourself, or go without.
